Spam Musubi Rice Balls
Turn your spam musubi into rice balls for a little twist!

Ingredients
- 100 g spam light
- 2 eggs
- 200 g sticky white rice cooked
- 1+1/2 Tbsp soy sauce
- 1+1/2 Tbsp sugar
- 1 packet of roasted seaweed (Korean gim)
Instructions
- Begin by dicing your spam into small little cubes.
- Then crack 2 eggs into a bowl, season with salt and whisk!
- Turn on heat to medium. Drizzle oil and pour your egg mixture into the pan. When it's 60% cooked, mix with a spatula and smash into small pieces. Turn off heat and set aside.
- Heat up another pan and start cooking your diced spam. While that's cooking, make your sauce. It should be a 1:1 ratio of soy sauce and sugar. I did 1 1/2 Tbsp of soy sauce and sugar.
- Mix the sauce and pour over spam.
- Let the sauce marinate into the spam. Turn heat to low and gently mix and stir until sauce is fully soaked in.
- In a bowl, add 200g of cooked sticky white rice. Then add your egg and spam. Smash one packet of roasted seaweed and give it a good mix with your hands.
- Roll and shape into rice balls. Serve with kimchi or by itself!
