I always love a good oil pasta- and if you ever visit Korea, you’ll notice a lot of Italian restaurants in Korea will generally have clam oil pasta as part of their pasta menu. This recipe you clicked on won’t be made with clams, (because it does take more time hehe) but it will have some bacon!
But feel free to take it out, or add another protein of your choice. With that being said, let’s dive into my take on the famous Italian aglio e olio pasta!
Is it really easy to make?
When I first tried making oil pasta, I kept failing because I wasn’t starting off with enough oil on the pan. I kept resisting to pour more because it looked like a lot of oil in one go, but trust the process and you’ll get a nicely salted and oily pasta!
Also, just to note- I prefer using angel hair pasta for this recipe because I do feel like the sauce does soak up better, resulting in a stronger flavour.

-
Begin by boiling water for your pasta. Add a pinch of salt.
-
While the water is boiling, slice garlic cloves and bacon.
-
On medium heat, add 5-6 Tbsp of olive oil to your pan. Then toss in your garlic slices and bacon.

Then, crush up 5 dried Peperoncino or chili flakes and add a 1/2 Tbsp of minced garlic. Mix.
-
Once your water is boiling, cook your pasta for 3 minutes.
-
Save a scoop of pasta water (or 6 Tbsp) and drain the remaining pasta water.
-
Add the pasta into the pan, and pour in the scoop of pasta water as well.
-
Then add in a spoonful of chicken powder (can season with salt if you don't have any) and mix the pasta and sauce thoroughly for 1-2 minutes.
-
Sprinkle pepper, serve on a plate and enjoy!
