Creamy Bacon Noodles

Have you tried tuna cucumber sushi like this? I love whipping this recipe up when I’m looking for a healthy meal for lunch.

It’s super easy – and I love making this when I’ve got leftover cucumber that I need to use up quickly. You’ll need cucumbers, canned tuna, mayo rice and of course a peeler!

What should I serve with it?

If you need a bit of dipping sauce, you can serve it with soy sauce. Personally for me, the saltiness of the tuna gives it a nice savoury touch so I just like to have it as is!

Ingredients

Instructions

  1. Begin by dicing chopped onions and mincing garlic cloves.

  2. Then, slice your bacon strips into small pieces.

  3. Turn on heat to medium and drizzle pan with oil.

  4. Stir-fry your onions, bacon and minced garlic until golden brown.

  5. In a pot, add water and let it boil.

  6. Once the water boils, add your udon packet. Just cook until you can disassemble the noodles.

  7. In your pan, add 1:1 ratio of milk and cream and stir gently.

  8. Then, add 1/2 Tbsp of chicken bouillon powder OR season if salt if you don't have it. Adjust to your liking.

  9. Transfer the udon noodles from the pot and stir until the cream becomes thicker. Lower heat.

  10. Sprinkle chili flakes on top for some extra spice before serving!
