10-Min Bacon & Corn Cheese

If you ever visit Korea, you will see 'sool-jips' and 'pochas' in every corner of every street.

Korea is known for its drinking culture, as people here love to go out for a drink after work, whether it's with friends, lovers or family. We love it so much that we go to 1-cha, 2-cha, 3-cha and so on! (1-cha meaning first round of drinks, 2-cha = second round of drinks at a new place).

After a light dinner, most people will head to a 'sool-jip' or 'pocha'- which translates to drinking restaurants/bars/spots. A lot of sooljips will offer their own kind of signature dish, but in most local places, you will be able to find 'corn cheese' under the side menu section. As it is a very simple and inexpensive dish, most people may order it just to satisfy the one dish per person order, but it's a dish that's loved by probably and most likely everyone, so if you order it, you can't go wrong!

If you're lucky, some places may give a small portion of this dish on a grizzling hot plate as a 'service'/free dish. But even if you order it yourself, I promise you you won't regret it!

Corn Cheese Dish

This simple dish only needs 5 main ingredients, however I added pieces of bacon to add an extra little something!

This recipe serves 1-2 people, and I highly recommend it serving as a side dish instead of a main plate!

Description

If you visit a drinking spot in Korea, you'll probably find this on the menu... Pairs deliciously with beer! Takes only 10 minutes.

Ingredients
  • 340 g canned corn
  • 4 tbsp mayonnaise
  • 2 strips bacon
  • 1 1/2 tbsp sugar
  • 75 g mozzarella cheese (shredded)
  • butter (small knob)
  • parsley flakes (optional)
Instructions
  1. Instructions

    Slice your bacon strips into bite sized pieces and cook on medium heat.

  2. Set your bacon aside and open your can of corn. Drain the water.

  3. In the same pan, (medium heat) add a tiny knob of unsalted butter (OR you can use oil) and let it melt.

  4. Add your drained corn. Mix until moisture has disappeared. Then, add 1.5 Tbsp of sugar and 4 Tbsp of mayonnaise. Mix well.

  5. Once it's mixed, flatten out your corn to the pan. Then, sprinkle on shredded mozzarella cheese on top. Top it off with your cooked bacon.

  6. Place a plate, or cover over the pan and let it cook for 30-40 seconds.

  7. Open the lid/cover/plate and sprinkle parsley flakes and enjoy!
