In Korea, we normally serve our meals with rice, soup, a dish of meat along with various side dishes. We have many side dishes made with eggs, but this one is a more fun version of the regular egg roll (gyeranmari). For this one, I wanted to spazz it up and add a thick strip of spam in the middle of the roll, so I could get two flavours in one bite! This recipe only takes 20 minutes, and it’s a recipe your whole family will love!
Is it a side dish or a main dish?
In Korea, we would consider this a side dish, but you can most definitely serve it as a main dish with a side of rice and roasted seaweed. It’s a simple dish that you can enjoy alone or with your friends and family.
Simple Spam & Egg Roll

If you have leftover spam, try it this way! Goes perfectly with a bowl of rice.

Begin by chopping up 2 small thin green onions

Then slice your spam into 3cm thickness. Two slices should be enough for 1 egg roll.

Turn up the heat to medium and cook your spam on both sides until golden brown.

While the spam is cooking, beat 4 eggs into a bowl. Season with salt + pepper.

Set your cooked spam aside. On the same pan, drizzle a bit of oil.

Pour in your egg mixture on to the pan. Make sure it's not too thick!

Place your spam horizontally in the middle of the pan. Let the egg cook until 80% percent. Then using two spatulas, flip one end over the spam and flip again. Shift over the egg and pour in more of the egg mixture so that it connects with the end of the first egg layer.

Before flipping and rolling, make sure the egg is 80% cooked through. Repeat until egg mixture is gone.

Slice and serve as is or with some ketchup!
