If you love a spicy kick, you're gonna love these spicy spam rice balls! Rice balls are a great meal to pack for lunch or a picnic. If you can't handle the spice, you can skip the fresh chili step -it'll still taste just as good!
With this spam rice ball recipe, feel free to swap out the spam for bacon or even canned tuna. For canned tuna, there is no need to fry it, rather just add it straight to the mixing bowl!
For the finishing touch, I sprinkled it some sesame seeds and parsley flakes. However they are optional ingredients. I do want to suggest adding the sesame seeds, because it definitely elevates the flavour!
This recipe serves for 1-2 people.
These spam rice balls can be served with anything you'd like! You can accompany it with some sliced cucumbers, carrot, or if you're packing lunch for your kids, you can add a warm soup with it. These rice balls also pair well with some kimchi or yellow pickled radish!

Wash your chilies and cut them down the middle. Start chopping them finely. You can chop 1 if you'd like it to be less spicy!
Next, cut 100g of spam into 4cm thickness. Turn sideways and chop again into cubes.
Heat up your pan and drizzle oil. Add diced spam. Cook for 2-3 minutes until golden brown.
Then add 2 Tbsp of soy sauce and 1 Tbsp of sugar. You can reduce the amount of soy sauce according to your spam can. I bought low/light sodium.
Cook for another minute, while giving it a good mix.
Next, add your chopped chili. Mix with spam and cook for 1 more minute.
Turn off heat and add into bowl with your cooked rice.
Squeeze 1.5 Tbsp of mayonnaise and crush your roasted seaweed packet with gloves on.
Sprinkle sesame seeds and parsley flakes on top for an extra kick! Enjoy!
